Recently back in town after working as an art director at Vanity Fair in NY, Chris says he pretends he's foraging for food when he builds his alpine-themed menu at Grüner. Upcoming highlights: snail soup, nettles in ricotta dumplings, and pickled fiddlehead ferns. The books he keeps at hand: "An Excuse to be Together," by Portland's own Robert Reynolds, and James Beards' timeless "Menus for Entertaining."
